Lodigiani Products
The Lodigiana Gastronomy embodies the cuisine typical of the Po Valley, where fog and humidity are particularly suitable to the maturing of cold cuts and indeed here pork is the starting ingredient, especially in autumn, of the recepes of this area (one remarkable example is that of tripe). But besides this, the Lodigiano is also a great producer of milk: Grana Padano cheese and Mascarpone cheese are products which were fborn in Lodi, a city which has also been for many years an important butter producer. The Carnaroli variety of rice was probably first cultivated in the Lodigiano countryside, where later also developed the breeding of bovines and the cultivation of tomatoes.
As for the cuisine, pork meat and cheese are quite widespread ingredients. During the centuries, creativity and, more often, necessity, have brought housewives to invent simple dishes, based on the poor ingredients that were available to them, but managing at the same time to make them tasty (soups). During holidays, game or other animals were skillfully flavoured; on the table made their appearance also desserts, which were as simple, but also as tasty (like for instance the "Os da Mort").
The Restaurant "Albergo del Sole" in Maleo was one of the first in Italy to launch the gastronomy "school", which was founded exactly on the re-discovery and the revisitation of poor cuisine. This is a trend which inspired the chef of the "Sole", Franco Colombani, who is considered by everyone as the "Master" and by whom many were inspired, like for Instance the "Pescatore" in Canneto sull'Olio, which is nowadays one of the best reastaurants of the world.
However, it is agriculture what that characterizes not only the cuisine, but also the lodigiana life.
The Gastronomical Festival gives a chance to taste all of this delicious dishes.
The provincial trademark Lodigiano Terra Buona certifies the quality of products coming from breeding and agriculture, which are natural and healthy. Many of these products come from farms associated with the "Typical Lodigiani Products Consortium", whose mark reflects the strongly agricultural origin of this territory.
